Organic Type 85 Flour

This organic type 85 flour, designed for artisan bread baking, is a blend of hard red winter and hard red spring wheat with organic malted barley. The higher ash content increases the nutritional value of the flour without compromising its baking performance, and the malting helps develop a beautiful rich brown crust. Organic Type 85 is not quite white flour and not quite whole grain. This organic wheat flour is perfect for sourdough and rustic-style breads of any shape and size. 

Please note: This is not Piedrasassi-grown flour. I am currently only selling this commercial flour to help out local home bakers, who are experiencing a shortage of flour in our grocery stores.
