High Gluten Bread Flour

This unbleached, unbromated high gluten flour blend is comprised of enriched wheat flour and malted barley flour, and is particularly good as the main or only flour used in a recipe for bread. Many bakers will add whole grain flour for more character and flavor, and this flour stands up to the addition of the gluten-inhibiting whole grain. With a protein level of 14%, it can achieve good development of gluten, which allows for the formation of good crumb and a well-shaped loaf.

Please note: This is not Piedrasassi-grown flour. I am only selling this commercial flour to help out local home bakers, who are experiencing a shortage of flour in our grocery stores.
