This seeded rye bread is the most dense of our loaves, and as the complete dough undergoes a very quick final proof, has the least gluten of our offerings. Inspired by the Danish rugbrød, it is started with a freshly milled whole rye levain and packed, inside and out, with seeds (flax and sunflower). Delicious as breakfast toast with sweet or savory toppings (we particularly like it with Sashi’s quick/cured salmon) or as part of a cheese/charcuterie platter.
Whole rye and wheat flour are both used in this bread. Available as a pan loaf only.
